Vegan Vanilla Cheesecake
crust
three cups crumbled vegan digestives
half cup vegan margarine, melted
quarter cup sugar
filling
three and a half cups cashew nuts, soaked and drained
two thirds of a cup coconut oil
two thirds of a cup agave nectar
two thirds of a cup lemon juice
one vanilla bean, scraped
soak cashew nuts overnight. preheat oven one hundred eightyC.
blend digestives in food processor, mix in melted margarine and sugar. press crus evenly into springform cake pan, and bake in oven for ten minutes. place on cooling rack.
in food processor blend together nuts, oil, agave, lemon juice and vanilla paste. blend until very smooth, as thin as possible with no lumps. pour filling into cake pan and smooth out top. place in the freezer overnight.
take out cheesecake an hour before you want to serve. top with fruit or chocolate, or just eat plain.
trick your friends, let them guess your secret ingredient.

a canadian treat i mention fondly, my british man decided something needed to be done.
cheese curd being hard to find here, wensleydale subbed in nicely. homemade veggie tamari gravy was delish, a la Vegetarian Meat and Potatoes Cookbook. and the chips, perfection, skins on, proper shoestring fries.
hot and cheesy, these pommes frites were finished off slowly, and washed down with cider, pretty alright combo.

little days
i couldn't help but choose these plums, greens and reds and oranges, slightly oblong and specked with much more colour than the spanish plums they sat next to. i managed to nip to the shops before the rain hit today, and i felt the warmth on my back as i headed home. now it's pouring, leaves dripping.
something sweet and tart, the ground almond makes it hearty, on the edge of fall it's necessary, especially on this grey day. a touch of colour, and symetry never hurt.
almond english plum cake
six or seven small english opal plums
two thirds of a cup butter, softened
half cup sugar
two eggs
one cup almond flour
quarter cup flour
quarter teaspoon baking powder
preheat oven to 160C, prepare baking dish by greasing bottom and line with parchment paper.
wash and slice plums, and remove the pits. place facedown in a frying pan over medium heat, sprinkle with sugar and cook until dissolved.
cream together butter and sugar until smooth. mix in eggs, both flour and baking powder, until just combined. pour mixture into prepared dish. place plum halves face up equally throughout the batter. sprinkle with sugar and bake for thirty to forty minutes. eat warm with a cup of tea as the rain falls outside your second floor flat.

mostly i like his photo titles, or maybe these just remind me of summer in ontario. slight differences, provincial park and coco-cola signs on the drive, dewy mornings at camp and warm evenings with corn and a beer. maybe next summer, lake dives and mosquito bites aplenty.
